Jelly Oatmeal Bars

These are a wonderful snack or dessert. Any jelly or preserves will work, and pairing this fresh out of the oven with ice cream tastes heavenly! Thank you Pioneer Woman!!!





Ingredients:


  • 1-3/4 stick Cold Butter, Cut Into Pieces
  •  1-1/2 cup All-purpose Flour
  •  1-1/2 cup Oats (quick Or Regular) 
  • 1 cup Packed Brown Sugar
  •  1 teaspoon Baking Soda
  •  1/4 teaspoon Salt
  •  10 To 12 Ounce Grape, Strawberry, etc Jelly or Preserves  

Directions:

  • Preheat oven at 350 degrees
  • Butter a 9 by 11 or 8 by 10 inch baking dish
  • In a large bowl mix all ingredients except the butter
  • Add the butter and mix with your hands or pastry cutter until it forms into course crumbs
  • Sprinkle half the mixture on the bottom of the dish and pat lightly to pack together
  • Spread the jelly or preserves over the first layer
  • Sprinkle the remaining oat mixture on top and lightly pack
  • Bake for about 40 minutes or until lightly brown on top 
  • Let cool completely and cut into bars or if your like my family spoon out a piece when they come out of the oven and top with ice cream!

Sour Cream Noodle Bake




Another one of The Pioneer Woman's recipes! Its one of her recipes that is good for storing in the freezer, but my family and I ate it fresh.



Ingredients:
  • 1-1/4 pound Ground Chuck  or 3 frozen beef patties
  • 1 can 15-ounces Tomato Sauce
  • 1/2 teaspoon Salt
  • Freshly Ground Black Pepper
  • 8 ounces, weight Egg Noodles
  • 1/2 cup Sour Cream
  • 1-1/4 cup Small Curd Cottage Cheese
  • 1/2 cup Sliced Green Onions (less To Taste)
  • 1 cup Grated Sharp Cheddar Cheese (maybe a bit more if your a cheese head)
 


Directions:

  • Preheat oven to 350 degrees
  • Brown meat in a large skillet
  • Drain fat, then add tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper
  • Stir, then simmer while you prepare the other ingredients 
  • Cook egg noodles until al dente
  • Drain and set aside
  • In a medium bowl, combine sour cream and cottage cheese
  • Add plenty of freshly ground black pepper
  • Add to noodles and stir
  • Add green onions and stir.
  • Now add half of the noodles to a baking dish
  • Top with half the meat mixture, then sprinkle on half the grated cheddar
  • Repeat with noodles, meat, then a final layer of cheese
  • Bake for 20 minutes, or until all cheese is melted
  • Cool,serve, and EAT!!! (with garlic or french bread and salad

Cracker Barrel Apple Crisp

This recipe may not be homemade, but it's still wonderful and simple and DELISH!


Ingredients:


  • 1 package of Kari Lee's Specialties Apple Crisp Mix
  • 1 stick of cold or cool butter 
  • 1 jar of Cracker Barrel's Fried Apples
Directions:

  • Preheat oven at 350 degrees
  • Butter or grease a round 10 inch pie pan
  • Pour Fried Apples in pan
  • Combine Apple Crisp Mix and butter by mix with your hand until it forms into smalls clumps 
  • Sprinkle evenly on Fried Apples and bake 50 to 60 minutes( until golden brown and apples are bubbly)
  • Cool and dig in!( WITH ICE CREAM!)

Smashed Potatoes

This is another recipe from The Pioneer Woman, but with a few different ingredients. This stuff is AMAZING and has been my family's go to side dish ever since we first tried it!

Ingredients:


  • 5 whole large Red Potatoes
  • 1 stick SOFTENED butter
  • 1/4 cup bacon bits
  • 1 cup sliced green onions
  • 3/4 cup sour cream
  • About a handle of shredded cheddar cheese
  • Salt and Pepper to taste

Directions:

  • Wash and poke small holes with  fork in the potatoes
  • Nuke potatoes in microwave for about 10 minutes, flipping over at 5 minutes
  •  Place potatoes in a large bowl or pot and with a potato smasher slightly smash NOT mash 
  • Add the sliced softened butter and slightly smash again
  • Now add the bacon, green onions, sour cream and salt and pepper by stirring in with a large spoon
  • Add cheese and stir and SERVE!
Optional: use fried chopped up bacon, or french fried onions for topping

Oreo Cake

I got this wonderful recipe on Pinterest and changed it up a bit. It's super easy to make and oh so good. You could try using different cake mixes or making a layered version, but this simple way is quite yummy!

Ingredients:

  • 1 box of white cake mix 
  • 1/2 box of the instant vanilla pudding mix (or Oreo flavored)
  • About 2 rows of Oreos
  • Container (or a bit more) of Cool Whip
Directions:

  • Preheat oven on 350
  • Mix cake mix according to directions on box along with 1/2 the pudding mix
  • Crush about one row of Oreos and fold in with the cake and pudding mixture
  • Poor mixture into a greased cake pan and bake for about 30 minutes or until it passes the fork test
  • Cool COMPLETELY
  • Mix together Cool Whip and another row of crushed Oreos and spread evenly on top of cake
  • Refrigerate for 1 hour or until chilled

Taco Casserole

This is a a great recipe to have with salsa and chips and is good change up from ordinary tacos. I got it from Pinterest!




Ingredients:

  • about 2 cups of tortilla chips (additional for serving)
  • 1 tablespoon of olive oil (or chili oil)
  • 1 onion chopped
  • 2 cloves of garlic minced
  • 1 pound of ground beef or chicken
  • 2 tablespoons of taco seasoning
  • 1 can of black beans drained
  • 1 cup of salsa
  • 1 cup of shredded cheddar cheese
Directions:

  • Preheat oven on 350
  • Line the bottom of a casserole dish with chips that are slightly broken( bite- sized)
  • Heat oil in a large skillet and add sliced onions and saute until soft
  • Add meat and then taco seasoning, cook and break up meat 
  • Add beans and salsa to the mixture( I had to transfer the mixture into a large pot because I don't have a large enough skillet)
  • Spread the mixture onto the dish covered with chips
  • Sprinkle cheese on top and bake for about 20 minutes or until cheese is melted and gooey
Additional toppings: Sliced tomatoes, green or red pepper, olives, lettuce or whatever your heart desires!

Blueberry Delight

I got this recipe from my Mom's school friend and can't get enough of it! It's perfect for summer, but I could eat it all year round!


Ingredients:

  • 1 1/2 stick melted butter
  • 1 1/2 cup self-rising flour
  • 1 cup chopped pecans
  • 1 block cream cheese
  • 1 1/2 cup powdered sugar
  • 1 1/2 containers of Cool Whip
  • 1 can of blueberry pie filling

Directions:
  • Preheat oven on 350 degrees
  • For crust, mix melted butter, self-rising flour, and pecans together
  • Put mixture in glass casserole dish and spread out evenly with fingers( set out cream cheese to allow to soften a bit)
  • Bake at 350 for about 20 minutes or until brown
  • Set out and begin topping mixture
  • For topping mix with electric mixer cream cheese (softened) and powdered sugar until smooth
  • Add half a container of Cool Whip and mix
  • Spread mix on crust evenly
  • Pour blueberry filling on top of that and spread evenly
  • Top with about 1 container of Cool Whip
  • Sprinkle on fresh blueberries for a tasty decoration and refrigerate overnight or at least an hour and enjoy!!!

Sliced Potatoes

These are a great side dish to almost any meal and very addicting. My mom and me even taste be fore baking!(which is not recommended)


Ingredients:

  • 3 russet potatoes
  • 2 tablespoons olive oil
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon season salt
  • 1/4 teaspoon salt
  • more salt and pepper to taste and Parmesan cheese

Directions:
  • Preheat oven to 375 degrees
  • Wash and dry potatoes
  • Slice potatoes( thinly and evenly)
  • Place in a large bowl and add the seasonings and mix together until well coated
  • Place on a cooking tray with aluminum foil as flat and even as possible
  • Sprinkle with desired amount of Parmesan and salt and pepper
  • Bake for about 20 to 30 minutes or until golden brown
Serve with as a side dish for nearly any meal!
I got this recipe from my Memaw but added a little bit more seasonings to it.
