Ingredients:
- 5 whole large Red Potatoes
- 1 stick SOFTENED butter
- 1/4 cup bacon bits
- 1 cup sliced green onions
- 3/4 cup sour cream
- About a handle of shredded cheddar cheese
- Salt and Pepper to taste
Directions:
- Wash and poke small holes with fork in the potatoes
- Nuke potatoes in microwave for about 10 minutes, flipping over at 5 minutes
- Place potatoes in a large bowl or pot and with a potato smasher slightly smash NOT mash
- Add the sliced softened butter and slightly smash again
- Now add the bacon, green onions, sour cream and salt and pepper by stirring in with a large spoon
- Add cheese and stir and SERVE!
Optional: use fried chopped up bacon, or french fried onions for topping
