Apple Brown Betty

I found this recipe in The Pioneer Woman's cookbook, and it is Amazing! It goes quick and is good anytime of the year!


Ingredients:

  • 8 slices wheat bread
  • 3 apples (granny smith)
  • 1 1/2 cups packed brown sugar
  • 2 sticks of butter
  • 1 cup of heavy cream
  • 1 tablespoon granulated sugar

Directions:
  • slice bread into strips, then slice into strips the opposite way
  • core and peel apples then slice and dice them
  • place half diced bread in buttered baking dish (9 by 11 inch dish)
  • sprinkle on half diced apples and half brown sugar
  • dot with butter
  • repeat layer of remaining bread, apples, and brown sugar
  • dot with pats of butter
  • sprinkle 1/2 cup of water a spoonful at a time on top
  • bake covered with foil for 45 minutes on 375 degrees
  • remove foil and bake for 10 more minutes
  • serve with either cream mixture (heavy cream and sugar mixed together) or ice cream! 

Cookie Brownies

This is a recipe I got from my memaw and its was my first one to do on my own! My Memaw got it from her Aunt Rose who was born in 1900! Enjoy!



Ingredients:
  • 2 3/4 cup of self rising flour
  • 1 stick of butter
  • 1 box brown sugar
  • 3 eggs
  • 1 cup nuts (pecans or walnuts)
  • 1 package semi-sweet chocolate chips

Directions:
  • Grease pan and sprinkle with flour and set aside
  • Melt butter in saucepan
  • Stir in sugar and cool
  • Beat in eggs 1 at a time
  • Add flour mixture, nuts, and chocolate chips
  • Blend well and pour into greased/floured pan
  • Bake at 350 degrees for about 25 minutes
  • Cool and cut into squares
