Ingredients:
- 1/2 pound or so of boneless, skinless chicken breasts, cut into small chunks
- 12 ounces of whole wheat linguine or pasta of your choice, broken in half
- 4 medium carrots, chopped into 3 inch long strips
- 1 medium red or green pepper, cut into 3 inch long strips
- 1 bunch of green onions, white part sliced and green part cut in 3 inch long strips
- 4 cloves of minced garlic
- 1/4 cup of soy sauce
- 1 teaspoon of garlic powder
- 1 teaspoon of corn starch
- 1 tablespoon of sugar
- 4 cups of chicken or vegetable broth
- 1/2 cup of water
- 2 teaspoons of extra virgin olive oil
Optional: 1/2 teaspoon of red pepper flakes
Directions:
- After cutting the chicken and chopping the vegetables, add the chicken, then the pasta, then the vegetables to a large stockpot
- Cover and bring to a boil
- Stir and reduce heat to low or simmer
- Cook covered for 15 minutes stirring occasionally, cook until most of the liquid is gone and the chicken is done
