Chicken Lo Mein

This is a one pot wonder I found on Pinterest on thewholesomedish.com that really is a wonder! You just chop some veggies up and through everything in the pot for a few minutes and its done and delicious! The original recipe on the website shows more pictures and the nutrition of this meal per serving that is really good but I hope you enjoy this!


Ingredients:

  • 1/2 pound or so of boneless, skinless chicken breasts, cut into small chunks
  • 12 ounces of whole wheat linguine or pasta of your choice, broken in half
  • 4 medium carrots, chopped into 3 inch long strips
  • 1 medium red or green pepper, cut into 3 inch long strips
  • 1 bunch of green onions, white part sliced and green part cut in 3 inch long strips
  • 4 cloves of minced garlic
  • 1/4 cup of soy sauce
  • 1 teaspoon of garlic powder
  • 1 teaspoon of corn starch
  • 1 tablespoon of sugar
  • 4 cups of chicken or vegetable broth
  • 1/2 cup of water
  • 2 teaspoons of extra virgin olive oil
Optional: 1/2 teaspoon of red pepper flakes

Directions:
  • After cutting the chicken and chopping the vegetables, add the chicken, then the pasta, then the vegetables to a large stockpot
  • Cover and bring to a boil
  • Stir and reduce heat to low or simmer
  • Cook covered for 15 minutes stirring occasionally, cook until most of the liquid is gone and the chicken is done
  • Enjoy!!!
