Lime Chiffon Dessert

This delightful recipe is from my wonderful neighbor Betty Cox. I love everything she makes and she's always just a call away when I need help with a recipe or ingredients. But this recipe is SO delicious. Its has a green tent to it so its perfect for Christmas parties or reunions, but its a cold dessert so it would be just as good in the summer!



Ingredients:

Crust

  • 1 1/2 cups crushed graham crackers (about 24 squares or you can buy the boxed crushed kind)
  • 1/3 cup sugar
  • 1/2 cup butter or margarine (1 stick) MELTED
Filling
  • 1 (3 oz.) package lime gelatin
  • 1 cup boiling water
  • 2 packages (one 8 oz. and one 3 oz.) cream cheese SOFTENED
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 (16 oz. container frozen whipped topping, thawed
Direction:
  • Combine first three ingredients
  • Set aside 2 tablespoons for topping, Press remaining crumbs onto the bottom of an ungreased 13x9x2 inch baking dish and set aside
  • In a bowl dissolve gelatin in boiling water, COOL
  • In a mixing bowl beat cream cheese and sugar
  • Add vanilla, mix well
  • Slowly add gelatin until combined
  • Fold in whipped topping
  • Spoon mixture on the crust
  • Sprinkle with remaining crumbs
  • Cover and refrigerate for 3 hours or until set 
  • ENJOY!
